Ingredients

  • 3 to 4 ripe bananas, mashed
  • 1/2 cup melted butter
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 and 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat the oven to 350°F and prepare a 9×5-inch loaf pan by greasing it or lining it with parchment paper.
  2. Mash the bananas until smooth in a large bowl.
  3. Mix in the melted butter until thoroughly combined.
  4. Add the sugar, mixing until smooth. Incorporate the eggs one at a time, beating well after each addition, followed by the vanilla.
  5. Whisk together the flour, baking soda, salt, cinnamon, and nutmeg in a separate bowl.
  6. Fold the dry mixture into the banana mixture just until combined.
  7. Fold in the nuts if using.
  8. Pour the batter into the prepared pan and spread it evenly.
  9. Bake for 55 to 65 minutes, or until a toothpick inserted into the center comes out clean.
  10. Let cool before removing from the pan, and enjoy!
