- 1 zucchini, sliced
- 1 red bell pepper, chopped

- 2 cooked chicken breasts, shredded
- ½ cup barbecue sauce
- 1 cup shredded cheese (cheddar or mozzarella)
- 4 flour tortillas
- Olive oil spray
- 2 bell peppers, halved and cored
- 1 cup cooked quinoa or brown rice
- ½ cup black beans, drained
- ½ cup corn kernels
- ¼ cup salsa
- ¼ tsp cumin
- ¼ cup shredded cheese
Instructions
- Preheat your air fryer to 390°F for 3 minutes.
- For Garlic Butter Shrimp: In a bowl, toss the shrimp, zucchini, and red bell pepper with olive oil, garlic, paprika, melted butter, and a sprinkle of salt and pepper. Place in the air fryer basket and cook at 390°F for 8-10 minutes until shrimp are pink and veggies are tender. Serve with lemon wedges.
- For BBQ Chicken Quesadillas: Mix shredded chicken with barbecue sauce. Layer mixture and cheese on a tortilla, top with another tortilla. Lightly spray both sides with olive oil and air fry at 370°F for 4-5 minutes per side until golden. Slice into wedges.
- For Stuffed Peppers: Combine quinoa, black beans, corn, salsa, and cumin. Spoon into halved bell peppers and top with cheese. Air fry at 360°F for 10-12 minutes until peppers are tender and cheese is melted.
