Ingredients

Scale
  • 1 lb large shrimp, peeled and deveined
  • 1 zucchini, sliced
  • 1 red bell pepper, chopped
  • 1 tbsp olive oil
  • 1 tbsp melted unsalted butter
  • 2 garlic cloves, minced
  • ½ tsp paprika
  • Salt and pepper to taste
  • Lemon wedges, for serving
  • 2 cooked chicken breasts, shredded
  • ½ cup barbecue sauce
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 4 flour tortillas
  • Olive oil spray
  • 2 bell peppers, halved and cored
  • 1 cup cooked quinoa or brown rice
  • ½ cup black beans, drained
  • ½ cup corn kernels
  • ¼ cup salsa
  • ¼ tsp cumin
  • ¼ cup shredded cheese

Instructions

  1. Preheat your air fryer to 390°F for 3 minutes.
  2. For Garlic Butter Shrimp: In a bowl, toss the shrimp, zucchini, and red bell pepper with olive oil, garlic, paprika, melted butter, and a sprinkle of salt and pepper. Place in the air fryer basket and cook at 390°F for 8-10 minutes until shrimp are pink and veggies are tender. Serve with lemon wedges.
  3. For BBQ Chicken Quesadillas: Mix shredded chicken with barbecue sauce. Layer mixture and cheese on a tortilla, top with another tortilla. Lightly spray both sides with olive oil and air fry at 370°F for 4-5 minutes per side until golden. Slice into wedges.
  4. For Stuffed Peppers: Combine quinoa, black beans, corn, salsa, and cumin. Spoon into halved bell peppers and top with cheese. Air fry at 360°F for 10-12 minutes until peppers are tender and cheese is melted.

Notes
