Description

A deliciously comforting dish combining mac and cheese with hearty chili flavors, perfect for family dinners.


Ingredients

  • 1 pound ground beef (or ground chicken)
  • 1 yellow onion, chopped
  • 1 poblano pepper, seeded and chopped
  • 1 tablespoon chili powder
  • 2 teaspoons garlic powder
  • 2 teaspoons smoked paprika
  • 1 teaspoon ground cumin
  • 1/4 teaspoon cayenne pepper
  • 1 can (28 ounces) crushed fire-roasted tomatoes
  • 1/4 cup tomato paste
  • 1 can (4 ounces) diced green chilies
  • Salt and black pepper to taste
  • 23 cups chicken or beef broth
  • 1 pound short cut pasta
  • 1/4 cup hot sauce
  • 2 ounces cream cheese, at room temperature
  • 2 cups shredded melty cheese (Colby, cheddar, pepper jack)
  • Green onions and cilantro for serving

Instructions

  1. Preheat the oven to 425° F.
  2. Add the ground meat and chopped onion to a large pot set over medium-high heat. Season with salt and pepper, and brown the meat.
  3. Add the poblano pepper, chili powder, garlic powder, smoked paprika, ground cumin, and cayenne. Sauté for about 5 minutes until fragrant.
  4. Mix in the crushed tomatoes, tomato paste, and diced green chilies. Pour in the broth and adjust seasoning to taste.
  5. Bring to a boil and add the pasta. Simmer for about 10 minutes until al dente, stirring often to prevent sticking.
  6. Stir in hot sauce, cream cheese, and half of the shredded cheese. Cook for a few minutes until creamy and everything is well combined.
  7. Remove from heat, top with the remaining cheese, and bake for 5-10 minutes until bubbly and golden brown on top.
  8. Serve garnished with green onions and cilantro for a fresh finish.

Notes

For a vegetarian version, substitute the meat with black beans or lentils. Adjust spices to taste.
