Description

Ingredients

  • 2 large potatoes, cubed
  • 1 lb ground beef or turkey
  • 1 taco seasoning packet
  • 1 cup corn (canned or frozen)
  • 1 cup black beans (canned, rinsed, and drained)
  • 1 cup diced tomatoes
  • 1 avocado, diced
  • Fresh cilantro, for garnish
  • Salt and pepper, to taste
  • Olive oil

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Toss the cubed potatoes with olive oil, salt, and pepper. Spread them out on a baking sheet and roast for 25-30 minutes, or until they’re nice and crispy.
  3. Cook your ground meat in a skillet over medium heat until browned. Drain excess fat, then stir in the taco seasoning. Add corn, black beans, and diced tomatoes, cooking until everything is heated through.
  4. Divide the roasted potatoes among bowls. Top with the meat mixture, diced avocado, and fresh cilantro. Serve warm and enjoy!
