- 2 cups all-purpose flour
- 1 ½ cups sugar
- ½ cup unsalted butter, softened
- 1 cup fresh strawberry puree (about 1 pound of strawberries)
- 4 large eggs
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon vanilla extract
- 1 cup unsalted butter (for frosting)
- 4 cups powdered sugar
- ½ cup strawberry puree (for frosting)
Instructions
- Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
- Cream together the softened butter and sugar until light and fluffy, about 3-4 minutes.
- Add the eggs one at a time, beating well after each addition.
- Gently fold in the fresh strawberry puree and vanilla extract.
- In another bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually add this dry mixture to the creamed butter-sugar blend, mixing just until combined.
- Divide the batter evenly between the prepared pans.
- Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- Let the cakes cool in the pans for about 10 minutes before transferring them to wire racks to cool completely.
- For the frosting, beat the softened butter until creamy, then gradually add in the powdered sugar and strawberry puree, mixing until smooth and fluffy.
- Once the cakes are cooled, frost the top of one layer, place the second layer on top, and finish frosting the top and sides of the cake.

Notes
Feel free to substitute with gluten-free flour or use frozen strawberries if needed. Decorate with extra strawberries or a sprinkle of powdered sugar before serving.
