Description

Delicious and nutritious blueberry muffins packed with protein, perfect for breakfast or snacks.


Ingredients

  • 1 cup almond flour
  • 1/2 cup protein powder
  • 1/2 cup rolled oats
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/2 cup unsweetened applesauce
  • 1/4 cup honey or maple syrup
  • 1 cup fresh or frozen blueberries

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, combine the almond flour, protein powder, rolled oats, baking powder, baking soda, and salt. Mix until well incorporated.
  3. In a separate bowl, whisk together the eggs, unsweetened applesauce, and honey or maple syrup until smooth and creamy.
  4. Pour the wet ingredients into the dry and mix until just combined, taking care not to overmix.
  5. Gently fold in the blueberries, which will add a delightful burst of flavor to your muffins.
  6. Divide the batter evenly among your muffin cups, filling each about 2/3 full.
  7. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
