Description

A delightful twist on classic banana bread, this Healthy Blueberry Banana Bread combines ripe bananas and juicy blueberries for a wholesome treat that’s perfect for any time of day.


Ingredients

  • 2 ripe bananas
  • 1/3 cup melted coconut oil
  • 1/2 cup sugar or honey/maple syrup
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 1/2 cups white whole wheat flour
  • 1 cup blueberries (fresh or frozen)
  • 1 teaspoon cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. Mash the ripe bananas with a fork until smooth.
  3. Stir the melted coconut oil into the mashed bananas.
  4. Mix in the sugar, egg, and vanilla extract until everything is well combined.
  5. Sprinkle the baking soda and salt over the mixture and stir them in.
  6. Add the flour and mix gently until just combined. Be careful not to over-mix!
  7. Fold in the blueberries and cinnamon gently.
  8. Pour the batter into the prepared loaf pan.
  9. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  10. Allow to cool in the pan for a few minutes before transferring to a wire rack to cool completely.

Notes

For a sweeter touch, consider using honey or maple syrup instead of sugar. Store leftovers in an airtight container for up to four days, or freeze for longer storage.
