Description

A delightful gluten-free banana bread with a sweet cinnamon swirl, perfect for breakfast or snacks.


Ingredients

  • 3 ripe bananas, mashed
  • 1/4 cup coconut oil, melted
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup gluten-free flour blend
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon ground cinnamon
  • 1/4 cup brown sugar (for swirl)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. Mix the mashed bananas, melted coconut oil, honey (or maple syrup), and vanilla extract until well combined.
  3. Beat in the eggs one at a time, ensuring they’re fully incorporated after each addition.
  4. Whisk together the gluten-free flour, baking soda, salt, and cinnamon until blended.
  5. Add the dry ingredients to the wet ingredients, mixing until just combined—don’t overmix!
  6. Mix together the brown sugar and additional cinnamon for the swirl in a small bowl.
  7. Pour half of the banana bread batter into the prepared loaf pan, sprinkle half of the cinnamon sugar mixture on top, then add the remaining batter and top with the rest of the cinnamon sugar mixture.
  8. Use a knife to gently swirl the mixture together, creating a beautiful pattern.
  9. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
  10. Let cool in the pan for 10 minutes before transferring to a wire rack.

Notes

For a vegan option, substitute the eggs with flax eggs. Best served warm with butter or honey.
