Description

Ingredients

  • 3 ripe bananas, mashed
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch of salt
  • 3/4 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 cup gluten-free all-purpose flour
  • 1/2 cup chocolate chips (optional)
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 4×8 inch loaf pan.
  2. Mash the ripe bananas with a fork until smooth.
  3. Stir in the melted butter into the mashed bananas until well combined.
  4. Add the baking soda and salt, mixing gently until just combined.
  5. Stir in the sugar, beaten egg, and vanilla extract, blending thoroughly.
  6. Carefully fold in the gluten-free flour, being cautious not to overmix. If you choose, fold in the chocolate chips and walnuts at this stage.
  7. Pour the batter into the greased loaf pan, smoothing the top with a spatula.
  8. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the bread cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
