Description

A delightful trio of chicken nuggets, mac and cheese bites, and mini pizzas that are perfect for family meals and picky eaters.


Ingredients

  • 1 lb boneless chicken breast, cut into bite-sized pieces
  • ½ cup breadcrumbs (or panko)
  • ¼ cup grated parmesan cheese
  • 1 egg, beaten
  • ½ tsp garlic powder
  • ½ tsp paprika
  • Salt and pepper to taste
  • Olive oil spray
  • 2 cups cooked macaroni
  • 1 cup shredded cheddar cheese
  • ¼ cup milk
  • 2 tbsp flour
  • 1 egg
  • ½ cup breadcrumbs
  • 4 mini naan breads or English muffins
  • ½ cup marinara sauce
  • 1 cup shredded mozzarella
  • Toppings of choice (pepperoni, diced bell pepper, mushrooms)

Instructions

  1. Preheat your air fryer to 380°F for 3–5 minutes.
  2. To make the Chicken Nuggets: Dip the chicken pieces into the beaten egg, then coat with the breadcrumb-parmesan-spice mix. Spray with olive oil and air fry at 380°F for 10–12 minutes, flipping halfway through.
  3. For the Mac and Cheese Bites: Mix the warm macaroni, cheddar cheese, milk, and flour; cool slightly, then stir in the egg. Shape into balls or press into silicone muffin molds, coat with breadcrumbs, and air fry at 370°F for 8–10 minutes until crispy.
  4. For the Mini Pizzas: Top naan or English muffins with marinara, mozzarella, and toppings. Air fry at 350°F for 5–6 minutes until melted and bubbly.

Notes

Serve with your favorite dipping sauces for chicken nuggets and fresh fruit or veggie sticks alongside mac and cheese bites.
