Ingredients

  • 45 medjool dates, soaked in hot water for 10 minutes and drained
  • Double shot espresso (or 1 tbsp of instant coffee)
  • 1/2 cup chocolate chips

Instructions

  1. Combine soaked cashews, coconut cream, medjool dates, and espresso in a blender.
  2. Blend until smooth, ensuring everything is incorporated well.
  3. Stir in the chocolate chips for sweetness.
  4. Pour the mixture into ice cream bar molds.
  5. Freeze for several hours until fully set.
