Description
Delightful bite-sized treats made with creamy yogurt and fresh strawberries, coated in chocolate.
Ingredients
Scale
- 1½ cups chopped strawberries and/or raspberries
- 1 cup plain low-fat Greek yogurt
- 1 tbsp honey or maple syrup
- 1 tsp vanilla extract
- Dash of cinnamon
- Optional: ½ scoop vanilla protein powder
- 1¼ cups chocolate chips
- 1 tbsp coconut oil
Instructions
- Stir together the Greek yogurt, honey, vanilla, cinnamon, and optional protein powder until smooth.
- Fold in the diced strawberries and raspberries, mixing until they’re well distributed.
- Line a baking sheet with parchment paper and scoop 10 yogurt clusters onto it.
- Place the tray in the freezer for about 60 minutes, until solid.
- Melt the chocolate chips and coconut oil in the microwave, stirring every 30 seconds until melted.
- Dip each yogurt cluster into the chocolate.
- Return the dipped clusters to the parchment-lined baking sheet and freeze again for 10-20 minutes until hardened.
- Enjoy them right away, or store in an airtight container in the freezer.
Notes
For added flavor, try including almond or coconut extract. For a thicker chocolate coating, double dip the clusters.
