Description

Delightful bite-sized treats made with creamy yogurt and fresh strawberries, coated in chocolate.


Ingredients

Scale
  • 1½ cups chopped strawberries and/or raspberries
  • 1 cup plain low-fat Greek yogurt
  • 1 tbsp honey or maple syrup
  • 1 tsp vanilla extract
  • Dash of cinnamon
  • Optional: ½ scoop vanilla protein powder
  • 1¼ cups chocolate chips
  • 1 tbsp coconut oil

Instructions

  1. Stir together the Greek yogurt, honey, vanilla, cinnamon, and optional protein powder until smooth.
  2. Fold in the diced strawberries and raspberries, mixing until they’re well distributed.
  3. Line a baking sheet with parchment paper and scoop 10 yogurt clusters onto it.
  4. Place the tray in the freezer for about 60 minutes, until solid.
  5. Melt the chocolate chips and coconut oil in the microwave, stirring every 30 seconds until melted.
  6. Dip each yogurt cluster into the chocolate.
  7. Return the dipped clusters to the parchment-lined baking sheet and freeze again for 10-20 minutes until hardened.
  8. Enjoy them right away, or store in an airtight container in the freezer.

Notes

For added flavor, try including almond or coconut extract. For a thicker chocolate coating, double dip the clusters.
