Ingredients

  • 1 cup dates, pitted
  • 1 cup walnuts
  • 1 cup shredded carrots
  • 1/2 cup oats
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 cup maple syrup
  • 1/4 cup shredded coconut (optional)

Instructions

  1. In a food processor, combine the dates, walnuts, and shredded carrots.
  2. Add the oats, cinnamon, nutmeg, and maple syrup to the mix.
  3. Process everything until the mixture is well-combined and sticky.
  4. If you’re using shredded coconut, fold it in now.
  5. Roll the mixture into small balls and place them on a baking sheet.
  6. Refrigerate for at least 30 minutes to set.
  7. Store in an airtight container in the fridge or freezer.
