- 1/4 cup maple syrup
- 1/4 cup shredded coconut (optional)
Instructions
- In a food processor, combine the dates, walnuts, and shredded carrots.
- Add the oats, cinnamon, nutmeg, and maple syrup to the mix.
- Process everything until the mixture is well-combined and sticky.
- If you’re using shredded coconut, fold it in now.
- Roll the mixture into small balls and place them on a baking sheet.
- Refrigerate for at least 30 minutes to set.
- Store in an airtight container in the fridge or freezer.
