- 3 ripe bananas, mashed
- 1 cup almond flour
- 1/2 cup rolled oats
- 2 eggs
- 1/2 cup blueberries (fresh or frozen)
- 1/4 cup honey or maple syrup
- 1 tsp baking soda
- 1 tsp vanilla extract
- 1/2 tsp salt
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, mix the mashed bananas, eggs, honey (or maple syrup), and vanilla extract until well combined.
- In another bowl, combine the almond flour, rolled oats, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Don’t over mix—this is key to keeping your bread tender!
- Gently fold in the blueberries, being careful not to crush them.
- Pour the batter into the prepared loaf pan and bake for 45-55 minutes, or until a toothpick inserted in the center comes out clean.
- Allow to cool before slicing and serving as a delicious guilt-free treat!
Notes
Feel free to swap almond flour with regular or gluten-free flour. Add a pinch of cinnamon or nuts for variations.
