Description

A deliciously moist blueberry banana bread perfect for breakfast, dessert, or a sweet snack.


Ingredients

  • 3 ripe bananas, mashed
  • 1 cup almond flour
  • 1/2 cup rolled oats
  • 2 eggs
  • 1/2 cup blueberries (fresh or frozen)
  • 1/4 cup honey or maple syrup
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • 1/2 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, mix the mashed bananas, eggs, honey (or maple syrup), and vanilla extract until well combined.
  3. In another bowl, combine the almond flour, rolled oats, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Don’t over mix—this is key to keeping your bread tender!
  5. Gently fold in the blueberries, being careful not to crush them.
  6. Pour the batter into the prepared loaf pan and bake for 45-55 minutes, or until a toothpick inserted in the center comes out clean.
  7. Allow to cool before slicing and serving as a delicious guilt-free treat!

Notes

Feel free to swap almond flour with regular or gluten-free flour. Add a pinch of cinnamon or nuts for variations.
