Description

A delightful treat combining ripe bananas and fresh blueberries in a comforting loaf, perfect for breakfast or a snack.


Ingredients

  • 3 ripe bananas
  • 1/2 cup melted butter
  • 1 cup sugar
  • 1 egg, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 1/2 cups all-purpose flour
  • 1 cup fresh blueberries

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. Mash the ripe bananas with a fork until smooth.
  3. Stir the melted butter into the mashed bananas.
  4. Mix in the sugar, beaten egg, and vanilla extract.
  5. Sprinkle the baking soda and salt over the mixture and mix it in thoroughly.
  6. Add the flour and stir just until incorporated—don’t overmix!
  7. Gently fold in the blueberries to keep them from bursting.
  8. Pour the batter into the greased loaf pan.
  9. Bake for 60-65 minutes, or until a toothpick inserted into the center comes out clean.
  10. Let it cool in the pan for a few minutes before transferring it to a wire rack to cool completely.

Notes

For an even more tender loaf, let it cool completely in the pan before slicing.
