A quick and colorful weeknight dinner that’s easy to prepare and packed with flavor.
Ingredients

- 1 large red bell pepper, cut into 1-inch pieces
- 1 large orange bell pepper, cut into 1-inch pieces
- 1 red onion, peeled and cut into 1-inch pieces
- 1 medium zucchini, cut into 1-inch pieces
- 1 tablespoon avocado oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- 1/2 teaspoon kosher salt
- Pinch of black pepper
- 1 package chicken sausage (12 oz), sliced into 3/4-inch rounds
Instructions
- Chop the veggies and add them to a large bowl. Drizzle with avocado oil and toss to coat.
- In a smaller bowl, mix garlic powder, onion powder, Italian seasoning, salt, and pepper together, then add to the veggies. Toss until coated.
- Slice the sausage and add it to the bowl with the veggies. Mix until well combined.
- Preheat the air fryer to 390°F and spray the basket with cooking spray.
- Place the mixture in the air fryer basket in an even layer. Cook for 10 minutes, flipping halfway through.
- Once cooked, serve as is or alongside cooked cauliflower rice or brown rice.
Notes
For added flavor, consider serving with freshly grated Parmesan cheese or a drizzle of balsamic glaze.
