Description

This potsticker soup is a warm hug in a bowl with tender dumplings in a flavorful broth and fresh greens, perfect for busy weeknights or cozy dinners.


Ingredients

Scale
  • 4 cups chicken or vegetable broth
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 cups mixed greens (spinach, bok choy, etc.)
  • Soy sauce to taste
  • Green onions for garnish
  • Sesame oil (optional)
  • Dumplings (potstickers)

Instructions

  1. In a large pot, bring the broth to a simmer.
  2. Add the minced garlic and grated ginger to the pot.
  3. Toss in your dumplings and cook according to package instructions.
  4. Add in the mixed greens and cook until just wilted.
  5. Stir in soy sauce to taste, adjusting seasoning as needed.
  6. Serve hot, garnished with sliced green onions and sesame oil if desired.

Notes

For a quicker meal, use pre-packaged dumplings. You can also mix in a different variety of greens or experiment with spices.
