- 4 boneless, skinless chicken breasts, cut into bite-sized pieces
- 4 cloves fresh minced garlic
- 1/2 cup unsalted butter, melted
- 1/4 cup freshly squeezed lemon juice
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Skewers (wooden or metal)
Instructions
- Create the Marinade: In a bowl, mix melted butter, lemon juice, minced garlic, olive oil, salt, and pepper until well combined.
- Marinate the Chicken: Pour the marinade over the chicken and toss to coat. Let it marinate in the fridge for at least 30 minutes (or up to 4 hours).
- Skewer the Chicken: Thread the marinated chicken onto your skewers, leaving a little space between each piece.
- Cook the Skewers: Grill over medium-high heat for about 10-12 minutes, turning occasionally, until the chicken is cooked through (165°F). Alternatively, bake at 400°F for 15-20 minutes.
- Serve: Remove from heat and allow to rest for a couple of minutes before serving.
Notes
For best results, soak wooden skewers in water for at least 30 minutes before grilling. Feel free to add herbs or spices to the marinade for extra flavor.
