Description

A delightful dish that combines crispy honey BBQ chicken with creamy garlic parmesan potatoes, perfect for weeknight dinners or potlucks.


Ingredients

  • Chicken pieces (drumsticks or thighs)
  • Honey
  • BBQ sauce
  • Breadcrumbs
  • Olive oil
  • Potatoes
  • Garlic (minced)
  • Cream
  • Parmesan cheese
  • Salt
  • Pepper
  • Parsley (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix honey and BBQ sauce. Dip each chicken piece into the sauce mixture and coat with breadcrumbs. Place on a baking sheet and drizzle with olive oil. Bake for 25-30 minutes, or until cooked through and crispy.
  3. Peel and chop the potatoes. Boil until tender, then drain. In a pan, combine cream, minced garlic, and parmesan. Stir in the potatoes, and season with salt and pepper. Cook until heated through.
  4. Serve the chicken with creamy garlic parmesan potatoes, garnished with parsley.

Notes

For a healthier twist, you can use skinless chicken or whole wheat breadcrumbs.
