Description

A delightful, crispy treat combining fresh zucchini and Brussels sprouts, perfect for busy weeknights or special gatherings.


Ingredients

Scale
  • 2 medium Zucchini
  • 1 lb Brussels sprouts
  • 1/2 cup Parmesan cheese, shaved
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 teaspoon Garlic powder

Instructions

  1. Preheat the air fryer to 400°F (200°C).
  2. Cut the zucchini into thin strips and toss them with olive oil, salt, pepper, and garlic powder.
  3. Place the zucchini strips in the air fryer basket and cook for 10-12 minutes until crispy.
  4. Halve the Brussels sprouts and toss them with olive oil, salt, pepper, and Parmesan cheese.
  5. Air fry the Brussels sprouts for 10-15 minutes until golden brown and crispy.
  6. Serve warm as a delicious side dish.

Notes

For best results, don’t overcrowd the air fryer basket and cut larger Brussels sprouts to ensure even cooking. Can add other vegetables or spices for variation.
