- 2 medium Zucchini
- 1 lb Brussels sprouts
- 1/2 cup Parmesan cheese, shaved
- 2 tablespoons Olive oil
- 1 teaspoon Salt
- 1 teaspoon Pepper
- 1 teaspoon Garlic powder
Instructions
- Preheat the air fryer to 400°F (200°C).
- Cut the zucchini into thin strips and toss them with olive oil, salt, pepper, and garlic powder.
- Place the zucchini strips in the air fryer basket and cook for 10-12 minutes until crispy.
- Halve the Brussels sprouts and toss them with olive oil, salt, pepper, and Parmesan cheese.
- Air fry the Brussels sprouts for 10-15 minutes until golden brown and crispy.
- Serve warm as a delicious side dish.
Notes
For best results, don’t overcrowd the air fryer basket and cut larger Brussels sprouts to ensure even cooking. Can add other vegetables or spices for variation.
